Gluten free fluffy pancakes


I was inspired to have something delicious and traditional for breakfast this morning following last nights super yummy dinner. So I decided on gluten free pancakes. I added some strawberries and a sugar free (non corn syrup) pancake syrup to kind of not screw it up that much. Recipe as follows:


1 cup gluten free all purpose flour, 1 tsp baking powder, 1/2 tsp baking soda, salt, 2 eggs, 1/2 cup of milk (your choice), 2 tbsp grapeseed oil or coconut oil (if you would like it to have more of a coconut flavor), 2 strawberries


Mix wet ingredients and then add the dry ingredients. Whisk all together until smooth. Cook on medium heat onto a hot griddle. It takes about 4 minutes on each side to be completely cooked, but keep an eye on them just in case 😀
