Chicken, Bacon and Avocado Salad with Garlic Vinaigrette


Our waistline definitely suffers after the christmas holiday! So it’s always a great resolution to start eating healthier again once the new year starts. I decided to start cooking using the Paleo Cookbook, which has a lot of yummy recipes. Today I chose a chicken and bacon salad with a garlic vinaigrette. Follow the recipe below to enjoy this yummy salad!


4 leaves Romaine lettuce, 1/2 avocado, 1/4 cup feta cheese, 3 bacon strips, 1 chicken, salt, pepper, 1 tbsp garlic, 1/4 cup olive oil, 1 tbsp dijon mustard


You can do this in any order you want. First I cut the avocados into little squares, adding a bit of salt and pepper. Then I prepared the garlic vinaigrette by adding the olive oil, dijon mustard, garlic, salt and pepper, and whisked until it all came together. Then I cooked the bacon and chopped it all after it was very crisp. While the chicken was cooking, I chopped the lettuce and mixed all the ingredients together, minus the vinaigrette. After I added the chicken, I drizzled the vinaigrette over the salad. And ta da… yummiest salad ever!!!
