Quick & Healthy Lunch

I’ve been doing this crazy diet for 11 days. I’m not going to even tell you what it consists of… but, basically, the amount of calories you can consume is very limited. So, I’ve had to figure out how to feel satisfied while not consuming a lot. I have to admit it has been hard, but I’ve been able to play with different foods to make great combinations, make my stomach happy and feel satisfied – because admit it, you only start eating shit when you don’t feel your hunger is satisfied. One of my favourite meals has to be today’s lunch, which turned out to be only about 160 calories. I made seared scallops with a light herb butter and asparagus. And, OMG it was amaaaaaazing!!! It was extremely easy to make… see directions and ingredients below.

Herb butter

unsalted butter, minced garlic, parsley

Seared scallops

a drop of coconut oil so scallops don’t stick, at medium-high heat leave about 2.5mts on each side (until they’re golden)

Asparagus

chop asparagus, boil water, leave for approximately 5 minutes after water is boiling
